Russ is the Director of Protein Research at Archer Daniels Midland Company (26 years at ADM). He has over 35 years of experience in the food industry. His current responsibilities with ADM include coordinating research efforts related to: development of new plant based protein ingredients; improving the functional properties of these plant-based proteins for use in food & industrial applications; development of protein-rich food products to address current market needs; technical support for protein ingredient used in the food industry; and interaction with researchers involved in emerging opportunities for protein in industrial applications.

Egbert holds a Ph.D. in Meat Science from Auburn University; a M.S. in Food Science from Utah State University and a B.S. in Food Science and Business Administration from Utah State University.
